佢成日係我面前睇佢啲video。睇完就覺得山本征治呢條友傻既。不過真係好Q勁!從此除咗Robuchon之外,又多個偶像啦!
好啦。買左sous vide supreme終於可以搵樣野學佢整先。今次整既係佢既D.A.B.(Dry aged beef)丼。我未食過呢樣都係靠想像。煮完出黎賣相真係好得。我唔知道呢個究竟係正版既幾多成功力。今次第一次整,整到咁樣我已經比個叻我自己啦。

所有Prep既相我都無影到,因為真係一腳踢,忙到咩都唔記得,係到真係上碟既時候先有心機拎部相機出黎~
1. 用Beef Broth + Ponzu 的飯,我無用到Tagine,已經夠忙,同埋尋日嘗試過係未成功既~今日唔想博啦~所以用電飯煲only~
2. 用KitchenAid將Prime Beef Chuck攪成肉碎,唔知佢加左乜... 我就加左Butter同Garlic同Beef Broth 黎煮~~~~煮到乾身,都煮左好耐,唔知係咪因為唔應該落Butter/油,越煮越多油,所以要煮好鬼耐,但都煮唔到好似佢咁乾身!
3. 用Sous Vide Supreme整既Prime Beef Chuck(我無買dry aged)60C/140F煮兩個半鐘。真空之前就放左鹽、胡椒、同lemon zest(我又cheap無用yuzu!)然後切片再點下日式燒肉汁+Ponzu。

題外話:夜晚我用LC鑊炒左啲冷飯,加之前淨左既Sous Vide慢煮牛牛鋪面,淋左少少牛角sauce。C6竟然話好味~我問佢之前個個好啲定呢個?佢竟然答呢碗~OMG,我攪咁多野都係白費心機~!
