哈哈廚房;中西fusion之Sous Vide 慢煮鹵水鴨腿
繼續試機,今日突然心血來潮想黎個中西Fusion。平時如果要鹵水,好多時候都會overcook左(我唔係大廚,係咁勁就已經開鋪啦~)。如果用Sous Vide應該係可以解決呢個問題~
出黎效果真係好好~
鴨腿係Whole Foods可以買到~
滷水我呢隻。方便嘛~
入袋真空seal都幾惡攪。攪左我好耐。周圍都係(部機入面)。
然後用Sous Vide Supreme 用85.5C浸左3個鐘!嘩!層油好恐怖!
上碟,色水都好夠~
勁入味~~~層皮好滑...肉唔老, 下次會試 80C~~~~
